
300 gr di farina
2 cucchiaini di lievito in polvere
160 gr di zucchero superfine per dolci
200 grams of cream
2 eggs finely grated zest of 1 lemon 75 ml of vegetable oil
a basket of fresh raspberries
Preheat oven to 180 degrees. Add sugar to flour and mix well. Then add the cream, eggs, lemon zest, olive oil and mix everything until ottenre a smooth and without lumps. At the end add the raspberries and stir gently to not break them. I for convenience I have previously frozen. Put the mixture in the muffin tins (not to be filled completely) and bake for about 15 minutes or until cooked. I have made with raspberries, but you can use other small fruits like blueberries or strawberries. A good day starts in the morning!
